Pasture Walk

Jack Taylor, Co-Owner of Mystic Hills Farmstead, will guide you through the pastures of the property, showcasing conservation, regenerative agriculture, and stewardship of the land. The property is conserved through a CCALT Conservation Easement, uses rotational grazing to manage sheep and cattle, and uses the symbiotic relationship of these animals to improve pasture and soil health. Late Spring in Routt County means lambs abound frolicking in the green grasses, irrigation ditches running along the fields of wildflowers, early spring vegetables and edible flowers ready for harvest, and busy farmers mending broken fences from the long winter before. Our walk through the pasture will allow you the opportunity to stand in the same pastures in which sheep and cattle will spend the next several months grazing, growing, and finishing into delicious grass fed and finished meats. Ask questions, shake your farmers hand, and surround yourself with the beauty of hundreds of acres of pasture that are used to bring lamb and beef from the farm to your plate.

Cooking Workshop

Chereen Leong Schwarz of Wilderbean Provisions will show you how to cook a large piece of meat that is an easy crowdpleaser and you’ll also have the opportunity to play with your senses and create a treasure for you to take home! Large cuts of meat are often intimidating, but in reality, they are most of the time the easiest cuts to cook! Chereen will show tips for seasoning, trimming, and preparing your roast and how to slice, serve, and make the most out of your meat. Seasoning is key with meat, so she’ll guide you on how to make your own seasoning to take home and use in your kitchen!

Field Lunch

Part of this immersive ag experience is eating where your food is grown. We’ll have an al fresco meal with our dining room table in the field that lets you enjoy dining with views of the Zirkel Mountains, sounds of the sheep pastures, and the colors of the garden. Chef Chereen will serve a delicious meal that uses meat and veggies from the farmstead; it can’t get more local than that! 

Pop-Up Farm Stand

Take some treasures of the farmstead back home with you to enjoy at your own dining room table! The Pop-Up Farm Stand will feature Mystic Hills products such as grass-fed beef and lamb. Purchasing directly from your farmer helps keep agriculture alive in the valley and also supports small ag businesses that are giving their life to the land. Bring a reusable bag to bring home your farmstead goodies and clear some space in the freezer beforehand!

“Field” Trips Refund Policy: Refunds will be given in original form of payment until 30 days of event date. Tickets may be transferred to other parties at any time if original attendee cannot participate.
